Tabbouli or Tabbouleh is one of the most popular salads in Mediterranean and Arab countries but many people in the other countries have incorporated this salad into their diet.Experts say this salad can be a perfect meal for people who on a diet .
2 cups wheat bulgur
4 cups boiling water
3 cups fresh parsley
1/2 cup fresh mint
8 green onions
2 red onions
1 large diced cucumber
2 tablespoons olive oil
1/2 cup lemon juice
2 small tomatoes
Ingredients for dressing:
2 tablespoons Mustard sauce
1 medium integer
1 cup olive oil
1/2 cup grape vinegar
1 tablespoon pepper
2 tablespoons salt
It should be noted that to prepare the Lebanese salad ,first mix the bulgur with some oil in a lid and then pour some boiling water over it and leave the lid for 15 to 30 minutes.
Grate or chop the cucumber and then chop all the ingredients in the smallest possible in order .
Drain off the bulgur and pour it in a salad bowl and add the rest of the ingredients. Mix well and add the sauce and finally add salt and pepper to the ingredients and mix again.
Lettuce leaves can be used to decorate the salad dish . Arrange the lettuce and sprinkle with salad ingredients in the salad dish and then add a little pepper ,salt and lemon juice.
It should be noted that it takes about 45 minutes to prepare the salad ,which can be served as a meal .
Obviously a salad made of vegetables can be a source of fiber for body ,so it can be very beneficial for people who have constipation or hemorrhoid.
Lentil Tabbouli salad :
In this lentil Tabbouli recipe I took all the classic flavors of the Tabbouli salad and combine it with lentils. So what you get is a very tasty ,flavorful ,healthy salad that makes a great side dish or lunch .
1 cup lentils
2 cups tomatoes finely chopped
4 cups water
1 bunch parsley ,finely chopped
1/4 cup fresh mint ,finely chopped
1/3 cup red onion finely diced
1 tablespoon cinnamon
1 tablespoon salt
2 tablespoons allspice
2 tablespoons olive oil
Pepper to taste
1/4 cup lemon juice
At first you should soak lentils for about 8 hours or overnight.
In a medium pot bring lentils and water to a boil and then let lentils cook for 20-25 minutes until just tender. Strain and rinse with cold water until lentils are nice and cold.
Dice or chop onion,tomatoes,parsley and mint very well and place in a medium size bowl .
Toss in rinsed cold lentils and mix well in olive oil,lemon juice,salt ,pepper ,cinnamon and allspice.
You can add salt and lemon again if necessary and let the flavors meld for at least 10 minutes. Chill until ready to serve.
Tips for Lentils Tabbouli :
Remember to cook lentils,it only takes about 20-30 minutes,depending on the size of the lentils .
The cinnamon and allspice in this lentil Tabbouli recipe may seem strange ,or even too much ,but give it a try and see the result .
You’ll want to season the lentils with salt towards the end of their cooking time . If you add salt to the water right away ,the lentils come out tough and feel like they are never quite cooked . Then you’ll be tempted to cook them longer and you might overcook them by accident.
Save time by preparing all the veggies and fresh herbs while the lentils are cooking.
For the most flavorful salad ,you’ll be want to scoop our the cucumber seeds and discard them . You’ll also want to drain the chopped tomatoes. This way the extra liquid from the cucumber and tomatoes will not get into your salad,and the lemon and olive oil salad dressing stick to the cooked lentils for maximum flavor.
Zest the lemon before juicing it ,I’ve forgotten this before and let me tell you ,it sucks to zest a lemon that’s already been juiced.
